Is anyone familiar with kefir grains and could they be used in soy,rice or almond milk?

I have some in hibernation in my refrigerator and wonder kefir and kefir cheese could be make with the other milks. I know there are many products made with soy but my gyno told me to stop eating soy as it is a plant form of estrogen and I was having bleeding problems which required a D&C last year. I have not seen any products like cheese or yogurt made with the rice or almond type of milks and wondered if anyone had tried making their own using the kefir grains.
