(And the hysterical thing is: I used to LOATHE rice before I started Heather's diet!) There's a lot of gluten-free products out there that I'm just beginning to experiment with. I got some GF waffles that are pretty dang good! And there's breads and pastas, too. They're made with alternative grain sources (like RICE!). I use the infamous Asian Rice Noodles a lot. Potatoes are yummy (I'm a huge fan! Of the sweet variety, too). Rice is used to make rice crackers (they pretty much taste like that cardboard used to make shoeboxes, but after you've had a few, they're not too bad and then you forget the taste of "real" crackers- or maybe I'm just fooling myself. If I am, don't tell me! I have to believe I like these!) I LOVE sushi, so that's a nice thing to eat. No gluten. If you go to a HFS, they should have a nice array of GF foods. You can also go to celiac.com to learn about GF life. There are also sites like The Gluten Free Mall if you want to order stuff. There are many sites out there, those are just the ones I've been visting. I haven't had too much time to just sit and read about this stuff... I'm just starting this GF thing, so I haven't experimented too too much, but I feel sooooo much better now that I'm not having the gluten! My skin is even getting really clear. Bizarre. It's a little scary to think of the toxins I must have been holding in and the nutrients I wasn't getting.... I'm going to try adapting some recipes to the alternate flours. May even start this weekend, if I can. May make some banana bread or something with some kind of cool flour. I figure what's the harm. It may turn out for crap, but at least I'll get a laugh! (If you want more predictable results than that, the celiac and GF sites have recipe collections and boards similar to -but not as good as!- this one.) So forgive me if we've talked about this before, but are you celiac? I can't keep things straight at the end of the day.
