I've never been to Mexico (YET! I'm determined to go SOON!), but I know everywhere else I've gone usually has coffee pots available in the room or at least at the desk... Just run the bottled water through the coffee pot. That's what I did on my last business trip. Poured it into the mug and I was good to go. I've read, though, that you should really clean the coffee pot before you use it in places where the water is sketchy! If the last person used tap water, the little microb-whosits in there could be hanging around still.
