Soup, SOUP, SOUP! It's such an easy way to incorporate veggies into your diet. Either make or buy some fat-free chicken or vegetable stock and keep it on hand. Buy your favorite veggies (include some potatoes), avoiding some of the "tougher-to-digest" varieties (cabbage, broccoli, etc.), and chop them up and throw them in the stock. Let it simmer for an hour, and bingo you have some great insolubles. Serve with some French or sourdough bread. Start out by eating just a little of the soup if you're at all gunshy.
Fix a smoothie to get some of your fruit. Heather's banana berry smoothie is terrific, and her suggestion of using a food processor instead of a blender is spot-on! It really does a much better job. Easy to digest, you get your insoluble fruit, and absolutely delicious.
