How long does it take for a trigger food to act?

Hi I want to know how long it takes for a trigger food to act?
for example, last weekend I was at a party and ate a sausage thinking it might be ok because it was on bread with no butter.
but 15 minutes later I had a severe attack and had to leave. the meat was well cooked but I dont think ill eat sausages again.
would the fact the attack came on so soon mean it might be a food allergy?
