HELP! my GI says that I have IBS with "Celiac tendencies"

I started going to this highly recommended GI and had all the tests (Colonoscopy, endo, bloodtests, etc) and my doctor says that I have a hiatal hernia, IBS, and she thinks I may have "Celiac Tendencies" although the tests came out negative for Celiac disease and every other disease/infection. There is basically NOTHING I can eat-for breakfast I have rice krispies with a banana in water(because I can't have milk and don't like soymilk), for lunch and dinner I have the same thing-Broiled chicken with either boiled white rice or a plain, baked potato and sometimes a scoopful of peas(with beano.) This seems to be the only thing that both diets allow me to eat. The strange thing is that I can eat potato chips and french onion dip, brownies, etc. like there is no tomorrow and I will feel great for weeks, and then all of a sudden I will be in excruciating pain for a few days. My GI says that all of the food that I am not supposed to be eating builds up in my stomach and then weeks later when it has accumulated enough, it makes me very sick. I didn't think food stayed in your system for weeks at a time..Am I wrong? Also, does anybody know of anything else that I can eat with both the IBS and Gluten-free diet? Not being able to eat has caused me to look like a skeleton and I'm very depressed. Please help..
