Hi,
Aside from the moral, ethical issues with veal, it is very low fat, especially the cutlets rather than the chops, so it should be okay. 20 years ago I had a diet cookbook that had a whole section on veal with calories, fat, protein etc, and it became one of my standard diet meals.

(All, I am NOT endorsing the treatment of the animals, just answering the factual question. Fortunately foie gras is too high fat so I don't have to worry about the ethics of forcefeeding geese!)
