What could be helpful in Digestive Enzymes if they are not really beneficial to IBS?

I find that they DO help me, along with Slippery Elm and I am scared to stop taking them.

The ingredients are as follows:

Amylase 6,000DU
Protease 12,500 HUT
Bromelain 3000,000PU (10mg)
Lipase 200LipU
Tilactase 1,000ALU
Cellulase 225 CU
Papain 100,000 PU
Ginger Powder 340mg
Equiv. to dry Peppermint Leaf Powder: 1g

Also, I get very hungry at night. A Dr told me to eat a corned meat sandwich before bed to help see me through the night. I love it but do not want to eat red meat if it will upset me. What is a safe snack to have before bed? I get ravenously hungry even if I had dinner. I mean really starving.
