Welcome to the board,

It cannot hurt to remove all forms of dairy for a while and see if there is an improvement. Many people with IBS report an improvement in symptoms when all forms of dairy are removed from their diet.

The removal of wheat from the diet even when Celiacs disease is ruled out frequently reduces IBS symptoms because wheat is high in a constituent called fructans. Fructans are indigestible but can be fermented by bacteria in the colon causing gas and bloating. Fructans are one of the five FODMAP groups know from clinical studies on IBS suffers to cause bloating and gas in individuals with functional bowel disorder such as IBS. You can read more about FODMAPs in the first two links in my signature.

I follow Heather's diet modified to remove some FODMAPs with reasonable success. Ask lots of questions there are many knowledgeable individuals on the board.
