hi i also have both ibs and gluten intolerance. I've been finding it hard to find stuff to eat as well but this is what i have been eating...
breakfast- oatmeal made from gluten free oats by Bob's Red Mill, Chex, breakfast shakes (non dairy milk, frozen banana, gluten free oats, maple syrup). I've also seen a gluten free pancake mix by Bob's Red Mill but I've never tried it
snacks- rice crackers, cupcakes made with Betty Crocker yellow cake mix, gluten free cookies by Dr. Lucy, Silk Soy Yogurt
lunch- rice, rice noodles, potatoes, grilled fish/ chicken
check your local health food store for stuff that is gluten free, dairy free, low fat and low fibre. Hope that was helpful
