Just wanted to post on something that makes turkey burgers, meatloaf, etc., much more palatable.
Besides safe seasonings, try incorporating a panade. A panade is a thick paste made from soaking one piece of good white sandwich bread in 1-2 tablespoons of low/non-fat milk. Mix that into your ground meat mixture, and it will be REALLY juicy even if you are using all white meat turkey.
Obviously, you would have to modify your milk/bread combo carefully if you are lactose/casein/gluten intolerant.

P.S. Don't overmix your ground meat mixtures! It will get tough. Only mix your ingredients until combined.
