As a banana ripens the starch is converted to sugar such as fructose. Soluble fiber is good for managing IBS symptoms. The best tasting banana with a high amount of soluble fiber and resistant starch are semi ripe bananas that are still firm i.e. yellow with some green but no brown spots.
