Do you have Heather's Eating for IBS book? It helped me get very familiar with what foods are OK and what isn't. Having that knowledge base will help you when your traveling. Also, if you haven't already it might be helpful to start taking Heather's Acacia Fiber (you start with a low dose and then gradually increase) It helps me. Eating for IBS is a great resource as it not only provides recipes but also explains what you should avoid and what you can safely eat and so much more. When I go out of town I pack for all possibilities and that seems to help with the anxiety part of traveling. I am also listening to Michael Mahoney's Hynotherapy CD's for IBS and find it has helped with my anxiety related issues from IBS. Also for some reason drinking peppermint tea daily as Heather recommends helps. It's not doing just one thing but making a lot of changes that works in tandem to make your traveling (and daily life) less stressfull. Learning as much as I could from her books and then following the diet and the other resources (hynotherapy, tea, and acacia fiber etc) has been helpful. There is no miracle cure out there - following her guidelines is work but the pay off is big. I admire that your going and hope that I'll be doing the same someday!
