Have you tried tuna-in-a-pouch? It really DOES taste fresher than canned! It's absolutely YUMMY. AND -- who needs mayo? Okay, it's expensive, but you're worth it.
I don't work anymore, thanks to this damn IBS (I still don't know how you guys do it!), but when I DID work, I used to grab a container of frozen soup out of the freezer on my way out the door; by lunch time it was defrosted, and all I had to do at work was microwave it for a minute. Yeah, I planned ahead and made a big pot of soup the weekend before and froze it in individual containers -- but this was a cheap and easy fix for lunches for me, and I knew it was nutritious as well.
I also used to make huge pasta and broccoli salads or Chinese chicken cabbage salads on the weekends and take individual servings to work during the week -- until I realized it was one of the main irritants of my IBS. Anyway, something you can make on the weekend and put into individual containers for the week makes sense to me.
