I have also had both colitis and IBS symptoms. Heather's diet allows grains, sugar, and yeast foods, including bread and other high carb starches which I needed to eliminate from my diet for a time to get well again. I did buy her book years ago and tried the diet, but I did not get any relief, which for me now makes sense now that I know colitis can have a fungal etiology, and mine did. If fungus is your issue with colitis, grains, yeast, sugar, processed foods with high carbs feed fungus and perpetuates the vicious cycle.
Is your main issue IBS or colitis/crohn's? Many have been helped with Heather's diet for IBS, but it may not help you if you have colitis issues. Everyone is different however, so no one can tell you with assurance that only one way of eating will be the thing that helps you. Keeping a food journal may help short term, but not help find the cause of your symptoms because the things that bothered me before I got well, I now can eat now that my gut has healed.
I am now symptom-free for both colitis and IBS symptoms, as long as I limit wheat, sugar and stay away from yeast. Probiotics would be key for you if you aren't taking them currently.
