The basic ingredients in packaged taco seasoning are as follows:
2 tsp. chili powder
1 1/2 tsp. paprika
1 1/2 tsp. cumin
1 tsp. onion powder
3/4 tsp. garlic salt
1/2 tsp. salt
1/4 tsp. cayenne
Anything you personally can't tolerate, just eliminate that ingredient.
Also some packaged ones add ground cilantro, oregano and perhaps some cornstarch thickener. It's also good that you add a little water and/or tomato sauce or paste while incorporating the seasonings into the browned meat. I personally just toss the seasonings on while I'm browning the meat, and then add a little water and tomato sauce and let the skillet simmer on low for a few minutes. There is no specific way that works better than another as far as I know.
Making your own seasoning is far less expensive than buying the packaged products, and at least you know what exactly is in it. Once you experiment in small quantities and find the seasonings you really like, then you can make a LARGE batch and store it a glass jar with a tight fitting lid.
Then, you also won't ever need to purchase packaged taco seasoning again, and it is just as good on a lot of other things.
