Yep! Stress and anxiety are a big IBS triggers for all of us.

The diet sounds good. One thing you might experiment with is removing the applesauce for a day or two and see what happens.

By chance did you check the ingredients in the probiotics you were taking? Sometimes it isn't the probiotic that causes the problem but the added ingredients. However, it is known that when you start a probiotic you can experience an increase in gas and bloating for a week or so.
