Unfortunately, at this time they don't which bacteria or why in some people certain bacteria produce methane. One possibility is certain foods allow a greater proliferation of methanogens (methane producing bacteria) in the bowel. Or in some people there is more widespread proliferation of methanogenic organisms than in others.
