I have been trying to understand what happens to a carrot that makes it IBS friendly when it is cooked. During my investigation I came across the carrot museum web site. It is rather neat! Apparently carrots become more nutritious when they are cooked because the tough insoluble fiber cell wall is degraded releasing more antioxidants.
