Newbie - Mint Question

Hello, This is my first post. Been suffering with IBS for a few years now, getting progressively worse as I get older. Just turned 41 and it's time to do something about it. So, lent the Eating for IBS from the library to see if I will buy it (probably will, it has great recipies!) and took a trip to the health food store to get organic oatmeal, fennel tea, rice milk and soy milk, rice cheese, and a handful of items I can use to start changing my diet.

Since I have a garden full of peppermint that took over, I hesitate to buy the tea leaves. Does anyone know the best way for me to harvest this boat-load of mint? I recently cut off the water supply as our water rates are going to skyrocket in a month and I was just watering "weeds" up until this point. I'm thinking of cutting it all down but how does one clean and dry it for tea?
