Well I have six "mini-meals" a day, I love to eat myself and before my symptoms had really kicked back up within the past year (for stress reasons as well) my husband (who is a bodybuilder and can eat massive amounts lol) would joke that I eat like a man! But it's not that bad cause i always think well....i'm gonna be eating again in 2 1/2-3 hours...and that's how it goes all day. Every three hours your eating so you are never really hungry. Trick is don't let it get over the three hours or your energy level will fall and you will become tired in turn eating more (usually crappy carbs) to boost your energy level again.
I love tomatoes and onions as well....in fact I love all veggies. tomatoes are inflammatory though and that makes it hard for us to digest, onions are also hard to digest. It may be the amount of veggies you are having that is causing your discomfort. I used to eat a whole bag of brussel sprouts with my dinner no potato no rice just veggies and meat, well now I can only tolerate about 5 (baby brussels) at a time with a potato and chicken.....i use spaghetti sauce more as a condiment instead of a sauce and that seems to be working for me.
As for oil I can't tolerate any, although I do ok with almond butter (not peanut, i cant tolerate that at all either)...i will have about 2t mixed with brown rice, 1/2 c cooked blueberries, 1/2 banana 2x's a day. That;s about all my body can take before I get cramps, bloating and major C. Fat seems to be a major trigger for me.
I wouldn't try and figure the 25% out that much, try adding about 2t to 3 out of your 6 meals a day and see how your body does with that. Make sure they are healthy fats...olive oil, nut butters, finely chopped nuts, wild alaskan salmon, wild caught tuna.
