I'll try to be the best help I can.
I love eating the small amounts so for me this is not a big challenge. For breakfast I usually have oatmeal with some apple- probably around 300 calories. Then I have about 100- 200 calories for a snack (carrots, apple sauce, crackers with homemade hummus etc). For lunch I have something small- lately I've been having rice and a small amount of black beans with carrots and mango. It's about 300 calories. In the afternoon I have another 100-200 calorie snack like Cheerios or a Muffin. For dinner I have another 300-400 calories. Then I have a safe dessert 100-200 calories again around 7:30 at night. That's just how I spread it out. I like being able to eat a often

As for insoluble fiber, you may need even less since you are IBS-D. Try eating almost all soluble fiber until you get stable then VERY slowly add in insoluble fiber- maybe even like 5 peas at a time.

I'm not sure I can help with the fat content. I try to avoid using oil if at all possible. I use Pam for everything
