The dextrin in Benefiber is produced from the hydrolysis or dextrinization of starch derived from wheat to produce a resistant starch. It can also be produced from corn. Wheat dextrin does not have the proteins and other constituents found in wheat. It is gluten free and unlikely to cause problems for individuals who are wheat sensitive.
