I just wanted to say Bravo to Sand for her very thoughtful "Page 1" postings. I haven't visited this message board much for a couple of years, and so this was the first time I had read these postings.

I've been following Heather's diet extremely closely for the past 5 or so years, to the point that my copy of her cookbook is in tatters. I so echo what Sand is saying, that following the diet as closely as possible, especially in the beginning, is extraordinarily helpful. I came across Heather's diet by chance. Experimenting with foods, I had noticed that certain foods (insoluble fibers, as it turned out) were often difficult for me to manage, but that cookbooks on IBS that I found in book stores didn't seem to recognize this. I was wondering how I would ever find recipes that I could tolerate when I browsed through Heather's book in a Chapters store and realized that she was cooking what I could eat. What a relief!

It took me about a year before I felt that I was cooking with ease in the new mode. So I really urge new folks to be patient and stick to it. While I was still experimenting with recipes, my husband would often remark that a certain dish was good, "considering." Considering that there was little fat, no whole eggs, etc. But over time I found recipes that we both enjoy tremendously, and he has totally changed his tune.

So, go for it!
