I have just started a gluten free (GF) diet, I will explain why in a moment. I have tried several brands of premade GF bread. Jillian's tastes best so far and is moist when first taken out of the bag, but after that it crumbles and is hard to make a sandwich stay together. I did find microwaveable GF French rolls for dinner that are ok. Perhaps I am not storing the bread right, should I try to make my own?
The reason I decided to try gluten free, even though I have had two negative blood test results for celiac, I was recently diagnosed with hashimito's thyroiditis, and I read that celiac disease is very common with hashimito's. Additionally, I have read that the blood test for celiac is not very reliable. Lastly, I read that celiac sometimes have a reaction to lipstick because of the gluten in the makeup. I get chemical burns on my lips when I wear most lipsticks, Burt's Bees is one of the few brands of lip color I can wear.
If the reaction I get on my lips, is anything like the reaction my intestines are getting from food, it is no wonder they are irritable. I also read that it can take a long time for the bowel to heal after going GF. I have been GF only for a few days; I know it is too early to discern a difference; I have noticed my sinuses are less runny, but that may just be due to the weather.
I have done GF searches on the forum and have found some good resources - thanks! Being on the EFI diet has helped me to practice substitution, not deprivation, so going a step further with GF has been a little easier. I appreciate any GF advice – especially on the bread.
