Sit her down and tell her exactly that. Prey on her maternal instincts and tell her how stressed out you are over her health. Maybe (and hopefully) she'll listen.

I don't know how old your mom is, but it's hard to undo a lifetime habit (i.e. eating poorly). Give her some literature on the subject.
