A serving of unpeeled carrots has about 2 grams IF and 1 gram SF. A peeled carrot has about 1 gram of each. Most of the fiber in carrots is indigestible and unfermentable in the large intesting. It will be passed in the stool. Also IF absorbers water increasing the size of the fiber particles. The more raw carrots you eat the more grams of fiber will have in your stool resulting in oranger and looser stools. The less you chew your carrots the larger the carrot bits in the stool. If you boil and mash the carrots before you eat them then the bits will be very small.

What you are seeing is quite normal.
