I don't actually consider myself vegan, although I eat no diary products. I do eat egg whites, though. I get the eggs from a local person who treats his chickens with love and respect. So technically I'm not vegan, but I am definitely vegetarian. I have made a list of 72 safe meals and continually search for more. I've found substituting soy or rice milk and cheese products in recipes works quite well, and because I eat a lot of meat substitutes I can use almost any recipe I find and make the proper adjustments. I got a couple of vegan cookbooks and they were quite good, but required a lot of time and some rather exotic ingredients. Now I use regular recipes. You do have to be "intentional" about what you eat, and take vitamins to be sure you're getting a balanced diet, but after making some mistakes, I find I can combine my veg lifestyle with the EFI diet quite well. I can't eat raw food or a lot of veggies in a day, which is somewhat limiting, but it can work. Nice to meet another veg!
