Took me about 7 months to get a diagnosis and start treatment, but I found info about the IC diet on my own, which offered some relief. Really, though, the biggest help has been my IC medication, Elmiron. Now I only have to avoid the most acidic foods, and do okay otherwise. This site was an invaluable help to me when I was trying to get a diagnosis: http://www.ic-network.com The diet section and the forums were especially helpful.
