Hi Sand,
You are so on target about eating for IBS the proper way, the Heather way. How quickly we forget the years of misery when doctors didn't know what to tell us, our own families were constantly coaxing us to try this or that item that set off a horrible attack and then they were sure it was all in our heads. I remember going out for dinner in NYC for my son's birthday at a famous fun restaurant called Carmine's. Carmine's is famous for its huge platters of gorgeous, good tasting Italian food. Everything is smothered in butter, olive oil, cheeses - you get the picture. I was so mortified because I spent a good part of the evening in the bathroom having such a painful attack I broke out in a cold sweat and almost fainted. Ever since following Heather's guidelines starting three years ago or maybe it's four now,I have managed to fight off attacks.

I switched to rice milk, I try some soy products (soy is still hard for me to digest)by using an enzyme before meals. The enzyme thing is like the magic bullet, but I still have to be careful. I don't think the enzyme would protect me if I ate a huge steak dinner with fries and cheesecake for dessert, but I can at least eat most neals without gastrointestinal problems.

I make sure to follow Heather's guidelines, often using her cookbook for ideas. Her pumpkin apple cake is legendary at my church because I have brought it so many times as refreshments during our Sunday morning Bible class. If I cheat once in awhile, I pay the consequences.

I know we long to be free of IBS, but we can't be. Sand is so right when she looked at a member's list of foods - most of which were triggers - and then had no pity for her poor results "following" the program. She wasn't following the program, just following the friendly support on these boards. That's not what will help you be pain free. Heather has nothing to gain from telling us how to eat. She shares from her own pain. Her web site is a godsend and I doublt if she is a millionaire from selling tea and acacia. She is such a resource for us and when members on this board try to tell others they can ignore the guidelines and still do well, it's a big, fat lie. So well said Sand, and I support you 100% for telling the truth about how to live with IBS.
