Jordy, you're absolutely right about Luna bars. They must have been on my mind since those days when I was only doing wheat free. They are wheat free but not GF. Luckily I haven't had one since that cookie mishap anyway .
Rice Chex is gluten free now, just make sure you get the new version. It even says "gluten free" on the box. They changed the formula so that it doesn't have barley malt anymore.

I still make my GF bread from the mix. My favorite is Pamela's . I purchased it in a box of 6 from Amazon so it's not as expensive as at the HFS.
hummus, ham, peppers, lettuce, tomatoes - yes, I can usually tolerate them. Usually I eat them with rice cakes or GF bread so I guess that does the trick.
Ham - I've never really had problem with ham. I buy the most plain one I can find (it still has additives but not as much). I also forgot to mention that often I just bake a chicken breast and once it's cold I slice it up and use that in place of ham.
Veggies - for steaming I like sugar snap peas, yams, carrots, parsnips, squash, zucchini, asparagus. Those are my staples. If I feel adventurous I throw in a little (and I mean very little) bit of broccoli or green beans.
Fruits - I like mangoes, apples, applesauce, bananas, watermelon, peaches, apricots, pineapple. I seem to be fine with these.
