A couple things. I'd take any information about GI transit times with a grain of salt. WebMd says that when you do a GI transit time test "normal" means seeing the *first* of the marker within 14 to 24 hours, then the *last* of the marker within 36 to 48 hours. Digestion is considered "slowed" if the markers take more than 72 hours to show up. However, there seem to be some caveats even about this range such as the fact that normal transit times vary from individual to individual and even for the same person from day to day. Furthermore, what you're eating can affect your transit time.

And that's the second thing. If all you're eating is SF foods, I'd think that would definitely slow your transit time. Since you can tolerate rice milk and bananas, try making a smoothie with that and throw in some peach. If you do okay with that, try adding in just a few berries at a time. Maybe that will help your system re-accustom itself to IF.

Finally, taking the Vitamin C is kind of the opposite of the EFI approach which is to soothe the gut so keep that in mind when you're deciding how to proceed. If you're IBS-C because your gut is spasming the Vitamin C may be just exacerbating the spasms. Also - and maybe this is nuts - but is it possible the charcoal itself is annoying your gut?
