If by normal foods you mean cheese, ice cream, steak, alcohol, and so on, then all I can say is "I wish". Following Heather's guidelines - low fat, dairy-free, high soluble fiber, a careful incorporation of insoluble fiber, and no trigger foods - is the major factor that keeps my IBS in check. Acacia is just a way to get Soluble Fiber in me without having to consume tons of SF foods.
As for tweaking what foods work, I'm in the Strict Constructionist camp when it comes to Heather's approach - it works for me as is. Other people take a different approach. But my advice is to start by following Heather's guidelines as she lays them out and see how you do.
