I second a lot of the suggestions already given: try ground turkey (I use breast or all white meat) to make hamburgers (Kree's Peking burgers are fabulous), meatloaf (Shell's meatloaf recipe is yummy), spaghetti sauce, chili, Maid-Rites, sloppy joes (Yoda's recipe is wonderful), and so on. Do try different types of seafood - there are a number of shrimp recipes, including a bunch of different scampi ones (I like mine best but I think they're all pretty darn good). Also, try scallops or mussels (I posted a Rachel Ray mussel recipe that's wonderful). Some types of fish - like swordfish - are not as fish-like as, say, salmon so maybe you can sneak some of that in.
Also, don't forget about frozen entrees and meals for your husband. They're often high in fat so they may not make good everyday choices but they could be just the thing when he can't stand another piece of fish or chicken. Stouffer's makes good lasagna, stuffed peppers, and spinach souffle; Marie Callender makes some full meals; and there's always frozen pizza. That way you're only really "cooking" one dinner - yours.
