I was terrified to start eating again too.

Start slowly! My big word of advice. Don't try to add too many new foods at once. I started with some roasted or grilled chicken breast - Just lightly seasoned. I added things like sweet potatoes, carrots and peas gradually too. I still make sure about 50% of my meal is SF. Eat safe foods you enjoy with your little additions to you meal. It all depends what you want to eat! I'm back up to eating all veggies (cooked) and even managing small salads, the occasional piece of light rye bread instead of French or Sour Dough. I do well with some fruits - melons, strawberries, canned peaches, and pears.
Everyone is different, you may have to experiment a little to find exactly what will work for you.
