Hi, I have IC also. It took me about 6 months of pain to get diagnosed (saw 3 different urologists). After being on Elmiron for 5 months, however, I improved greatly. I took Elmiron for about 1.5 years, and now I am off of it and only taking Aloe Vera capsules (freeze dried). I have been able to add lots back into my diet, even things like the occasional tomato sauce (with Prelief).

My point is that although you need it now, you may not be stuck with such a bland diet forever. I think I have a rather mild case of IC, but was still able to see significant improvement with medication. There are other treatments available as well.

Until your doctors can diagnose you with something, I would recommend sticking to the boring diet which doesn't cause you pain or discomfort. Also, check out http://www.ic-network.com. It was a huge help for me when I was struggling with diagnosis and diet. The message boards are very helpful.
