First of all - you should not go gluten free until after the upper endoscopy. They will check for damage typical for celiac sprue so it's important that you have been eating gluten before the test. I am having this test done in the beginning of January myself.

Sure you can have both IBS and celiac sprue BUT it could also be that you just have celiac sprue and that has made your intestines more sensitive to other triggers too, and that you will become less sensitive to the IBS triggers when you go gluten free and the intestines heal. So don't worry about this too much until you have the results of the test.
