I've found a great site vegweb.com which has tons of vegan recipes. Are you substituting gluten free products for pasta and flour? Something to add is Nutritional yeast flakes. It is full of B-12 vitamin which we miss out not eating meat. I add it to potatoes, popcorn, and pasta. For lunch I usually eat baked potatoes, bagels with peanut butter, left over pasta, or a veggie sub. Dinner I eat a lot of pasta, squash, eggplant,and rice.
