Bendee,
Go ahead and cook the meal for 4 or 8 servings, divide it by servings and bag or foil it then Freeze it. You have extra meals to eat when you don't have time to cook. I made a bunch of meals and froze them in a bag. When my mom took care of my daughter. I put the bags together by meat, starch and veggies. each in there own bag, put them together and all my mom had to do was pull out a meal each day as she needed it. It was great for her and she never had to worry about what to feed her. I also did all her snacks and desserts this way. For My mom I would put a whole days meals and snack in a small box for her and just but notes if she had to add soy milk, bread, or dry snack to her meals. It really turned out great and I still try and do the same now but I just cook the large meals and than freeze them by servings in containers and take them out as I need them. I just may need to add rice or baked potatoe & veggie to them. I also do the same for hamburgers and chili for her turkey dogs as well as her soups. Sometime I put them in 3 or 4 servings and then pull two groups out for mixed meals during the week.
And if your worried about the taste of the meals and want to cook smaller portions, than I would divide the measurements in half or fourth how every much you want to try. I think that would work. Maybe someone is better at convertering recipes for you, but this is what I would do. I'm lucky with my daughter because she will eat anything, and most of the recipes I have tried have been great. There have been a few I myself have not liked but they have been in the dessert recipes. Anyway I hope this helps some.
