You story mirrors my life so closely. Trying to find the elusive "stable" state is almost impossible. It sounds like the gall bladder removal really worsened your IBS, but it also seems like your emotions are playing a big part in how you feel. Have you ever tried anitdepressants or antianxiety meds? I have not tried them for IBS, but I am seriously considering them. I have heard lots of people say they have had good luck with them, and it may be just the thing you need to get your IBS stable. I, too, am a vegetarian (almost vegan), but recently I have been eating chicken and turkey and cutting back on the carbs a little. I am D, but sometimes A. I have noticed an improvement in the bloating and my tummy feels a little better without so much carb. I still eat mostly white foods: rice, potatoes, pasta, bread, etc, and most veggies cause me troubles. I know what you mean about feeling very hungry. I have eliminated most soy products for the most part, but on occasion I will have a veggie burger (vegan). Too much soy causes me trouble too. Some additives in foods, even soy bacon bits and bread, can cause problems. Be sure to check what is in foods you are eating just in case there are hidden additives. I would avoid cheese too.
I wish I could be more help. I am sorry you are feeling so badly. Do you take Heather's SF? How about her peppermint tabs?
