For fat grams you should be eating between say 15-25% of your calories from fat. That varies alot person to person. For a 2000 calorie a day diet that would be about 50 grams. But it is very important that each meal have the right amount of fat. You need fat but you can't have none sometimes then make it up with too much later on. Everything you eat should be no more than 30% absolute tops per meal- per what is in your stomach at one time that is. If you mix something fat free with something more high in fat at the same time that is ok.
Also keep in mind that eating insoluble fiber is still important but must be done with soluble fiber foods as a base. Don't cut out IF. Do cut out whole grain wheat though.

I snack a lot in the evening and that is ok. Grazing is best for the gut. Eating too much per meal or just at all is a common trigger. If you drink fennel tea in the evening you won't be as hungry. It is a slight appetite suppresant and a big help with bloating.
