I second the peas suggestion...in fact, right now I'm making a scrumptious tuna casserole with peas, zucchini and mushrooms! So far, I've found that peas are the easiest IF to add in, and they are super good, too  Just remember to start with smaller quantities and balance with SF in your meals.
