I use lite coconut milk and it contains less fat than many other things. 1 serving (1/4c) has 3 or 4 grams of fat depending on brand. So it works nicely for dairy free mashed sweet potatoes. I also use it in sauces and to cook rice *if the rest of the meal is very low in fat*! One must still figure out the fat content and keep it below 30%. If you are making stir fry for instance with cooking spray and chicken breast the meal is nearly FF already so that might be a time that I add 1/2c lite coconut milk into my rice water. Or I make a shrimp curry that is delicious, with roasted chili paste in a nonstick pan, then I add 1/4-1/2 cup lite coconut milk and stir, then a bunch of asparagus and cook til not quite tender. Then I add raw shrimp and cook til done, sprinkling on lime juice, scallions and Thai basil or cilantro. It is fabulous!!! And so for 2 people that has about 4-5 grams of fat per serving. Not bad.
I also use lite coconut milk in baking. I make cakes with it and also frosting and add it to muffins instead of buttermilk. I am very sensitive to fat and could never get coconut milk at a restaurant but I have no problem if I use it carefully at home.
