I'm a mustard freak, personally. Lately, however, I have been into chutneys & bean dips/spreads. Salsas are great spreads/condiments for sandwiches as well--tons of personality, personalization & creativity room in that department. Red pepper jelly is divine, especially on a portabella mushroom panini. Tapenade is pretty rich, as well. I get bored so quickly, alas.
If looking for ideas go to a specialty store, i.e. an Italian gourmet food store.
