I usually stick with mustards, just because they're the safest in most places. I detest plain yellow mustard, though - I usually go with a spicy brown.

Honey mustards can be a good choice, as long as you can confirm that they're just honey and mustard, with no mayo or other ingredients added.

Vinegar is another good choice, yes.

I think any other choices are going to depend on what the deli/restaurant offers. I *believe* the sweet onion sauce at Subway is safe, for example, but don't quote me on that one until you check out the ingredients (I know it's low-fat, but I'm not 100% sure it's dairy-free).
