An interesting experience with oats

Recently I decided to add very low fat oatmeal cookies to my diet. See recipe below (no dairy, no eggs). I used regular oatmeal.

About 5-6 days after I introduced them I started to become unstable. And within 2 days of removing them things settled down.

I think the oatmeal is not getting cooked enough. My next experiment is to either pre-cook regular oatmeal or use quick oats before I use it.

Recipe:

1-1/3 c. regular or quick rolled oats
1 c. white flour
2 tb. light olive oil or canola oil
1 t. baking powder
1/2 t. baking soda
1/2 t. salt
2/3 c. brown sugar
1/3 c. white sugar
1/2 c. water (adjust to for cookie consistancy)
1 t. vanilla
a pinch of cinnamon

Heat Oven to 350 deg. Combine ingredients as usual. Drop onto cookie sheet. Bake 10-12 mins. Makes 40
