Hi, I ate steel-cut for a while, and found that even when I soaked them in hot water overnight, I still had to cook them for at least 20 minutes in the morning. So I switched to Scottish Oats (Bob's Red Mill) which are more chopped up (and so easier to digest) than the steel-cut ones, but still have that great nutty flavour. They take 10 minutes to cook in the morning, with no pre-soaking. Hope this helps!
