I guess I'm not really understanding why an IBS-safe wedding cake would look any different from a normal wedding cake. You just need to find a bakery that's willing to use safe (low-fat, dairy-free) cake and icing recipes. I think the only thing you might have to take into consideration is that buttercream frosting - what's used in a lot of cakes to make the icing roses and things like that - would be ruled out. But some of the most gorgeous cakes I've seen have been decorated with fresh flowers anyway - my mom's, when she married my stepdad, had a spiral of flowers from top tier to bottom, decorated with tiny candles. It was breathtaking!
