Pills that release over time sound like a good idea. Hopefully the pharmacist will know what's best. If there is an iron supplement that's gentler it's well worth it to find. Some people have mentioned in the past that liquid form is easier to handle, maybe ask about that too.

On another note just remember that you are in control of taking these iron pills. It may take a while for you to be able to handle a higher dose, and it may take a while for your blood counts to return to normal, so don't rush into it too much and affect your IBS. If you take the pills and your IBS gets worse, you can always stop them for a few days and feel better. I found that's what happened with me, if I wasn't feeling well it only took a few days of not taking them to feel better again.
