The other protein foods I can think of are eggs (whites only, of course), beans, and wheat gluten. If you want to base a meal around egg whites as your protein, you could fix French toast with rice milk and egg whites, or an egg white omelette or scrambled eggs. Beans should be safe cooked thoroughly, mashed at least somewhat, and combined with soluble fiber. So, refried beans (homemade or fat-free canned), homemade bean soup mashed up, etc. Wheat gluten is a vegetarian protein substitute. I haven't tried it but it's supposed to have a "meaty" consistency--and it's soy-free. You can get it in the refrigerator section of some supermarkets, already marinated--you could try it in a stir-fry with some safe, thorougly cooked vegies, and serve the whole thing with lots of rice. Oh, and nuts--can you have low-fat peanut butter? How about finely ground nuts incorporated into quick breads? Those would up your protein intake, if that's what you're worried about.
